What to look for in a good plastic knives
- Flex test the blade. Press the tip against a plate: a decent knife bows slightly and springs back, a cheap one stays bent or cracks at the base.
- Check the serrations. Real serrations have depth and a slight edge bevel so they saw through a chicken breast or a bagel, fake ones are just bumps stamped into flat plastic that skid off the food.
- Handle thickness. Grip stock that's too thin will crack right where your fingers close around it, especially on a knife meant for anything tougher than cake.
